Items you will need to prep: Corn or Flour Tortillas Boneless Chicken Green or Red Enchiladas sauce Shredded Cheese Onion Olives Green Chili Salsa
First thing is to shred your chicken. Then cook it in the crock pot all day with your favorite seasonings. I use natural seasonings, adobo and lemon pepper. After it has cooked all day, prep your baking tray with tortillas, and make sure your onions and such is diced and ready. Put the chicken in the tortillas, add your enchilada sauce and green chili. Bake for 20 minutes then pull out and add your toppings. Let stand for 5 minutes then serve.
